Homemade fried donuts: the recipe to make them fluffy and delicious

Ingredients:
100 g of all purpose flour
150 g of bread flour
1 egg
35 g of butter
250 ml of milk
40 g of sugar
3 g of dry brewer's yeast
Lemon zest
Orange zest
1 tbsp of orange or anise extract
A pinch of salt
Directions:
1. Start by whisking egg yolk and sugar.
2. Then add warm milk, flour, yeast, melted butter, orange and lemon grated zest, extract and lastly beaten egg whites.
3. Move the dough into a bowl, cover it and let it rise for 30 minutes at room temperature.
4. After that, fold the dough.
5. Let it rise overnight in the fridge.
6. Divide the dough into small balls (about 70 g each) and make a hole in the middle.
7. Let rest the donuts for another hour.
8. Deep fry them in hot oil, then coat with some granulated sugar.
