Spinach and potatoes casserole

Ingredients:
400 g of frozen spinach
500g of potatoes
1 leek
Olive oil
2 green onions
200 ml of water
Salt and pepper
3 eggs
200 ml of cream
Salt and pepper
Dried oregano
Paprika
Mozzarella cheese

Directions:
1. Boil potatoes and set them aside.
2. Fry chopped leek in a pan with some olive oil and a garlic clove. Season with salt and pepper
3. Now add spinach and water, put a lid on and let cook for 10 minutes.
4. Whisk the eggs with salt, pepper, oregano, paprika and cream.
5. Mash potatoes on the bottom of a baking tray, cover with a layer of mozzarella cheese, add cooked spinach on top and lastly pour the egg and cream mixture.
6. Sprinkle with grated cheese and some fresh parsley.
7. Bake at 180 for 30-35 minutes.
