Low Carb Spinach Taco Shells

Ingredients:
100g Fresh Spinach
Boiling water
2 eggs
4 Tablespoons Oat flour
25g cup Grated Cheese
¼ teaspoon Garlic powder
¼ Teaspoon Salt
Instructions:
Cover spinach with the boiling water for 2-3 minutes then refresh in ice cold water.
Remove the spinach squeeze out the water.
The dry on kitchen paper until completely dry.
Now chop the spinach
Place spinach in a large bowl and add the eggs, flour, cheese and seasoning and mix to form a dough.
Divide the mix into quarters, an ice cream scoop works well for this.
Fatten into rough round shapes using the back of a spoon.
Bake at 200 °C for 20mins until coloured.
Remove from oven and cool for no longer than 2 mins then shape over a rolling pin.
Fill with your favourite fillings.
