Fluffy croissants: the secret to make them moist!

Here's how to make delicious homemade croissants!
INGREDIENTS

500g (4 cups) Flour
15g (3 tsp) Dry yeast
250ml (1 cup) Warm water
25g (2 tbsp) Sugar
4g (1 tsp) Salt
150g (2/3 cup) Butter
2l (8.45 cups) Water
25g (2 tbsp) Baking soda
Sesame
METHOD
- In a bowl with flour pour the water. Add sugar and dry yeast. Add salt and knead the dough. Cover it and leave it for 1 hour.
- Divide the dough into six parts. Make a ball of each part and spread it.
- Between the layers spread the butter. Cut the dough into triangles. Roll the triangles, some of them fill with hazelnut cream. In a pot pour water with soda. Leave it to boil.
- Add croissants to a pot and cook them. Take them out, put in a pan and sprinkle them with sesame.
- Bake them at 180C for 20 minutes. Serve.
