CRUMBLY POTATO STARCH COOKIES: dipped in milk, they're super easy to make!

INGREDIENTS
1 egg
70g (1/4 cup) sugar
Zest of 1 lemon
70ml (1/4 cup) rice oil
180g (1 1/2 cups) all-purpose flour
90g (3/4 cup) potato starch
10g (3/4 tbsp) baking powder
For sprinkling:
Sugar
METHOD
1. In a bowl, add the egg, sugar, lemon zest, and rice oil, and mix with a fork until the sugar dissolves.
2. Add the all-purpose flour, potato starch, and baking powder, and continue mixing. When the dough starts to form, knead it with your hands to obtain a compact dough.
3. Take portions of the dough and shape the cookies with your hands. Transfer them to a baking tray lined with parchment paper.
4. Sprinkle the cookies with sugar and transfer them to the oven. Bake at 170 °C / 340 °F for 20 minutes.
5. Serve the cookies all together on a serving dish and enjoy.
