PEAR MUFFINS: they're the perfect choice for a delicious snack!

INGREDIENTS (makes about 12 muffins)
2 eggs
120g (1/2 cup + 1 tbsp) sugar
100ml (1/3 cup + 1 tbsp) vegetable oil
100ml (1/3 cup + 1 tbsp) milk
270g (2 1/4 cups) all-purpose flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp ground cinnamon
3 pears, diced
METHOD
1. In a large bowl, combine the flour, sugar, baking soda, baking powder and cinnamon. Mix until evenly combined.
2. In another bowl, whisk together the eggs, vegetable oil and milk until smooth.
3. Add the dry ingredients to the wet mixture and stir until you get a smooth batter with no lumps.
4. Fold in the diced pears.
5. Line a muffin tin with paper liners.
6. Fill each liner with about 2 tablespoons of batter.
7. Bake in a preheated oven at 180°C/350°F for 20–25 minutes.
8. Let cool completely before serving.
