Cherry muffins: fluffy and delicious!

These easy cherry muffins make for a quick and delicious breakfast that can be grabbed on the go on those busy weekdays before work or school. 
 
INGREDIENTS
For the dough:
1 egg
80 g (⅓ cup) sugar
60g (1/4 cup) butter
200 g (1 ¼ cup) flour
4 g (1/2 tbsp) vanilla sugar
2 g (½ tsp) baking powder
 
For the cream:
1 egg
30 g (2 tbsp) sugar
4 g (1/2 tbsp) vanilla sugar
10 g (1 ¼ tbsp) cornstarch
45 g (3 tbsp) yogurt
 
150 g (¾ cup) cherries
Powdered sugar (for decoration)
 
METHOD
  1. Preheat the oven to 180C/360F.
  2. Wash and pit the cherries, cut them into quarters.
  3. In a bowl combine flour, sugar, vanilla sugar and baking powder and mix well.
  4. Add butter and crumble it with a fork or by hand.
  5. Mix in egg then continues kneading the dough with your hands.
  6. When the pastry becomes smooth, form 6 balls and flatten them a bit.
  7. Divide balls between muffin tray molds and press each ball firmly over the base and side of the slot.
  8. In another bowl whisk egg, sugar and vanilla sugar. Add yogurt and cornstarch and whisk until smooth.
  9. Add a tablespoon of chopped cherries inside each pastry basket and pour the cream on top.
  10. Transfer to the oven and bake for 20-25 minutes.
