Cherry muffins: fluffy and delicious!

These easy cherry muffins make for a quick and delicious breakfast that can be grabbed on the go on those busy weekdays before work or school.
INGREDIENTS
For the dough:
1 egg
80 g (⅓ cup) sugar
60g (1/4 cup) butter
200 g (1 ¼ cup) flour
4 g (1/2 tbsp) vanilla sugar
2 g (½ tsp) baking powder
For the cream:
1 egg
30 g (2 tbsp) sugar
4 g (1/2 tbsp) vanilla sugar
10 g (1 ¼ tbsp) cornstarch
45 g (3 tbsp) yogurt
150 g (¾ cup) cherries
Powdered sugar (for decoration)
METHOD
- Preheat the oven to 180C/360F.
- Wash and pit the cherries, cut them into quarters.
- In a bowl combine flour, sugar, vanilla sugar and baking powder and mix well.
- Add butter and crumble it with a fork or by hand.
- Mix in egg then continues kneading the dough with your hands.
- When the pastry becomes smooth, form 6 balls and flatten them a bit.
- Divide balls between muffin tray molds and press each ball firmly over the base and side of the slot.
- In another bowl whisk egg, sugar and vanilla sugar. Add yogurt and cornstarch and whisk until smooth.
- Add a tablespoon of chopped cherries inside each pastry basket and pour the cream on top.
- Transfer to the oven and bake for 20-25 minutes.
