TUNA FRITTERS: They’re so crispy they’ll completely transform your appetizer!

INGREDIENTS
2 eggs
Salt
30ml (2 tbsp) vegetable oil
110ml (1/2 cup) water
260g (2 cups) all-purpose flour
8g (1/2 tbsp) baking powder
160g green olives (pitted)
130g tuna in oil (drained)
For frying:
Oil for frying
METHOD
1. In a bowl, add the eggs, salt, vegetable oil, and water. Whisk until combined. Add the all-purpose flour and baking powder, then mix well until smooth.
2. In a food processor, add the pitted green olives and the drained tuna. Process until creamy, then add the mixture to the batter and stir to combine.
3. Scoop spoonfuls of the mixture and carefully drop them into the hot oil. Fry until golden.
4. Serve the tuna fritters on a serving dish and enjoy.
