ARTICHOKE PATE: perfect for enjoying on bruschetta for a tasty and delicate dish!

INGREDIENTS
4 artichokes
1 lemon (juice)
2 lemons
50ml extra virgin olive oil
Parsley
A pinch of salt
METHOD
1. Clean the artichokes: cut off the tips and stems, remove the tough outer leaves and the choke. Place them in a bowl with the lemon juice and lemon slices to prevent browning.
2. Bring a pot of water to a boil, add salt and 1 lemon. Add the artichokes and cook for about 20 minutes, until tender. Drain and let cool.
3. Place the cooked artichokes in a food processor, add the extra virgin olive oil, parsley, and salt, and blend until you obtain a smooth, creamy pâté.
4. Transfer the pâté to a bowl and refrigerate for about 20 minutes to allow it to set.
5. Serve the chilled artichoke pâté on a serving dish and enjoy.
