Perfect potato salad: a fresh and tasty side dish!

This salad is perfect for a tasty lunch!

INGREDIENTS

4-5 potatoes, peeled and chopped;
10-12 cherry tomatoes;
1 small red onion, sliced;
10-12 capers;
20 black olives, pit removed;
fresh basil leaves;
80 ml (6 tbsp) olive oil;
120 ml (½ cup) white wine vinegar.

METHOD

Boil chopped potatoes in salted water until done. Set aside to cool down.
Cut cherry tomatoes in half.
Pour vinegar over sliced onions to cover. Set aside for 10-15 minutes.
Mix potatoes with tomatoes, olives, capers, pickled onion and basil. Mix with olive oil and serve.
