Marinated zucchini: a fresh and tasty side dish!

INGREDIENTS
2 zucchini
40g of e.v.o. oil
1 drop of sesame oil
50g of apple cider vinegar
1 clove of garlic
fresh mint Q.B.
Salt to taste.
Lemon zest Q.B.
Sesame seeds to taste
Sliced almonds Q.B.
METHOD
1. Take some zucchini, wash them, clean them and slice them very thinly with a mandolin or potato peeler.
2. Put them in layers in a sieve and sprinkle them with salt for 30 minutes to make their water go away, then remove them and pat them dry with paper towels.
3. Now prepare the marinade, in a bowl put the apple cider vinegar, sesame seeds, oil, sesame oil, salt, garlic and lemon zest, mix well and keep it.
4. Place the zucchini inside a container and wet them with the marinade.
5. Cover with a lid and leave to marinate for at least 1 hour in the fridge, better still overnight.
6. And after resting, let's plant them, completing the pact with more sesame and toasted almonds to give them a crunchy feel, they're really excellent!
