GLUTEN-FREE COOKIES: light and fragrant!

INGREDIENTS
170g butter
140g (3/4 cup) sugar
Vanilla essence
A pinch of salt
Zest of 1 lemon
1 egg
2 egg yolks
340g (2 3/4 cups) rice flour
For decoration:
Powdered sugar
METHOD
1. In a mixing bowl, add the butter, sugar, vanilla essence, salt, and lemon zest, and mix with an electric mixer until smooth. Add the egg and egg yolks and continue mixing.
2. Add the rice flour to the bowl and start mixing with a spatula. When the dough starts to form, knead it with your hands to obtain a compact dough. Wrap it in cling film and transfer it to the fridge for 3 hours.
3. Once the resting time is up, transfer the dough to a work surface and roll it out. Cut out the cookies using a cookie cutter.
4. Transfer the cookies to a baking tray lined with parchment paper. Bake at 180 °C / 360 °F for 12 minutes.
5. Serve the cookies on a serving dish, dust with powdered sugar, and enjoy.
