CHOCOLATE FRITTERS (castagnole): the italian carnival recipe with an extra flavor! 🤩

INGREDIENTS (for 50 castagnole)
2 eggs
50g (¼ cup) of sugar
50g (¼ cup) of butter
200g (1 2/3 cups) of all-purpose flour
30g of cocoa powder
1 orange (grated zest)
2 tsp of baking powder
1 tsp of vanilla extract
2 tbsp of rum
A pinch of salt
Granulated sugar, for coating
1lt of peanut oil
 
PREPARATION
1. In a large bowl, mix together the eggs, softened butter, sugar, orange zest, vanilla extract, and rum.
2. Stir the ingredients with a spoon until well combined.
3. Add the chocolate chips.
4. Add the flour, baking powder, cocoa powder, and salt.
5. Stir again until the dough is smooth and homogeneous.
6. Shape the dough into small balls, about 5 grams each.
7. Drop them into hot oil and fry, turning occasionally, for about 5 minutes.
8. Drain the castagnole and toss them in granulated sugar.
