Tarte Flambée (Flammkuchen): tasty and crunchy Alsatian specialty!

INGREDIENTS
For the dough:
350g (3 cups) of all-purpose flour
Salt
30g (2 tbsp) of extra virgin olive oil
180ml (3/4 cup) of water (lukewarm)
 
For the dressing:
100g (1/2 cup) of quark cheese
150g (3/4 cup) of fresh cream
Pepper
Salt
150g of bacon
1 onion
Chives

METHOD
1. In a bowl add the flour and salt and mix. Add the olive oil and water and continue to mix. When dough starts to form knead it to obtain smooth and compact dough. Wrap in cling film and set aside for 30 minutes.
2. In a small bowl add the quark cheese and fresh cream and mix to combine.
3. After time has elapsed place the dough on a baking tray covered with parchment paper and flatten it with the hands.
4. Spread the cream mixture on the dough and season with salt and pepper. Arrange the bacon and onion. Bake in oven at 230°C/450°F for 20 minutes.
5. Transfer to the cutting board after baking, decorate with chives, and cut it into pieces.
6. Serve all together on a serving dish and enjoy.
