Crunchy artichokes in the oven: the crunchy and tasty alternative!

A delicious way to cook artichokes!
 
INGREDIENTS
3 artichokes
1 lemon, sliced
500ml (2 cups) of water
80g (1/2 cup) cornflour
60g (1/2 cup) breadcrumbs
40g parmesan
To taste lemon zest
2 eggs
Salt to taste
15 ml (1 tbsp) olive oil
 
METHOD
  1. Cut off artichokes stems, and discard outer leaves until you reach the soft ones.
  2. Clean the stem, and cut off 2/3 of the tips.
  3. Pour the water into a bowl, and add lemon slices and artichokes. Let soak for 15 minutes and pat dry.
  4. Meanwhile, prepare one bowl with cornflour, one bowl with breadcrumbs, and one bowl with beaten eggs seasoned with salt.
  5. Cut artichokes in halves and clean the inside. Then cut into wedges.
  6. Coat artichokes in cornflour, then dip in beaten eggs, and finally coat in breadcrumbs.
  7. In a small bowl combine grated parmesan with lemon zest.
  8. Arrange artichokes on a baking tray lined with parchment paper and spoon some seasoned parmesan on top.
  9. Drizzle with olive oil and bake in the preheated to 190°C/380°F oven for 20 minutes.
  10. Serve and enjoy!
