Crunchy artichokes in the oven: the crunchy and tasty alternative!

A delicious way to cook artichokes!
INGREDIENTS
3 artichokes
1 lemon, sliced
500ml (2 cups) of water
80g (1/2 cup) cornflour
60g (1/2 cup) breadcrumbs
40g parmesan
To taste lemon zest
2 eggs
Salt to taste
15 ml (1 tbsp) olive oil
METHOD
- Cut off artichokes stems, and discard outer leaves until you reach the soft ones.
- Clean the stem, and cut off 2/3 of the tips.
- Pour the water into a bowl, and add lemon slices and artichokes. Let soak for 15 minutes and pat dry.
- Meanwhile, prepare one bowl with cornflour, one bowl with breadcrumbs, and one bowl with beaten eggs seasoned with salt.
- Cut artichokes in halves and clean the inside. Then cut into wedges.
- Coat artichokes in cornflour, then dip in beaten eggs, and finally coat in breadcrumbs.
- In a small bowl combine grated parmesan with lemon zest.
- Arrange artichokes on a baking tray lined with parchment paper and spoon some seasoned parmesan on top.
- Drizzle with olive oil and bake in the preheated to 190°C/380°F oven for 20 minutes.
- Serve and enjoy!
