Stuffed artichokes: the vegetarian easy recipe to try

Serve it for a scrumptious vegetarian first or main course.
 
INGREDIENTS
4 artichokes
40g breadcrumbs
80g parmesan cheese
70ml (2/3 cup) milk
1 egg
300g of potatoes 
Dried spices to taste (mixed herb seasoning)
Olive oil to taste
Parsley to taste
Salt to taste
Black pepper to taste
 
METHOD
  1. Start by cleaning the artichokes. Remove the outer leaves, then cut the stem and the upper end. With a teaspoon, remove the inner choke and soak the artichokes in water with lemon juice to prevent them from oxidizing.
  2. Boil them for about 10 minutes in salted water and drain when cooked.
    Place the breadcrumbs, grated cheese, parsley, salt, and pepper in a bowl, add the milk and egg, and mix until homogeneous.
  3. Stuff the artichokes and press well with a spoon.
  4. Dice the potatoes, rinse them with water, and season them with oil, salt, and the mixed herb seasoning. Feel free to use whatever you like here!
  5. Transfer the potatoes to a baking sheet greased with oil.
  6. Add the artichokes and bake in the oven at 465°F/240°C for about 30-35 minutes.
  7. When cooked, take it out of the oven, and serve!
