Stuffed artichokes: the vegetarian easy recipe to try

Serve it for a scrumptious vegetarian first or main course.
INGREDIENTS
4 artichokes
40g breadcrumbs
80g parmesan cheese
70ml (2/3 cup) milk
1 egg
300g of potatoes
Dried spices to taste (mixed herb seasoning)
Olive oil to taste
Parsley to taste
Salt to taste
Black pepper to taste

METHOD
- Start by cleaning the artichokes. Remove the outer leaves, then cut the stem and the upper end. With a teaspoon, remove the inner choke and soak the artichokes in water with lemon juice to prevent them from oxidizing.
- Boil them for about 10 minutes in salted water and drain when cooked.
Place the breadcrumbs, grated cheese, parsley, salt, and pepper in a bowl, add the milk and egg, and mix until homogeneous. - Stuff the artichokes and press well with a spoon.
- Dice the potatoes, rinse them with water, and season them with oil, salt, and the mixed herb seasoning. Feel free to use whatever you like here!
- Transfer the potatoes to a baking sheet greased with oil.
- Add the artichokes and bake in the oven at 465°F/240°C for about 30-35 minutes.
- When cooked, take it out of the oven, and serve!
