Egg stuffed baguette: the vegetarian variant of a spectacular recipe!

Just bread and eggs to make the perfect breakfast recipe!
INGREDIENTS
1 red bell pepper
1 yellow bell pepper
1 zucchini
5 eggs
salt
pepper
100g white cheese
80g (1 cup) cheddar cheese
2 demi baguettes
METHOD
- In a pan add the red and yellow bell peppers, zucchini and fry until soft
- In a bowl add the eggs, white cheese, cheddar cheese, fried vegetable mixture, season with salt and pepper and mix it well
- Cut a deep “V” through the top of each baguette. Partially unstuff the baguettes.
- Divide and pour the mixture into each baguette boat and place it onto a baking sheet.
- Bake for 25 minutes at 350°F/175°C or until golden brown, puffed and set in the center.
