LEMON CAKE: EASY and with a DELICIOUS cream layer! 🍋

INGREDIENTS
For the mixture:
4 eggs
210g (1 cup) of sugar
Lemon (zest)
110ml (1/2 cup) of vegetable oil
110ml (1/2 cup) of water
260g (2 cups) of all-purpose flour
18g (1 tbsp) of baking powder
For the cream:
25g (1/4 cup) of cornstarch
50g (1/4 cup) of sugar
110ml (1/2 cup) of orange (juice)
110ml (1/2 cup) of lemon (juice)
Powdered sugar
METHOD
1. Add the eggs, sugar, and lemon zest in a bowl and mix with the electric mixer until fluffy. Add the seed oil, water, flour, and baking powder and continue mixing to obtain no lumps mixture.
2. Pour the mixture into the cake mold (24cm - mold size) and transfer to the oven. Bake at 180°C/360°F for 35 minutes.
3. Meanwhile prepare the cream by adding the cornstarch, sugar, orange, and lemon juice into the saucepan. Mix on low heat until the cream thickens. Remove from the heat and let it cool.
4. Once the cake is cooked, let it cool, remove it from the mold, and transfer it to the cutting board. Cut in half.
5. Spread the cream on the cake base and level it up to cover the whole surface. 6. Close with the other half and finally decorate with powdered sugar. Cut a slice and serve.
