FLORENTINE CARNIVAL CAKE: the traditional Carnival dessert, soft and fragrant!

INGREDIENTS
For dough:
260g (2 cups) of all-purpose flour
70g (1/4 cup) of sugar
Orange (zest)
10g of fresh yeast
1 tsp of powdered spices
130ml (1/2 cup) of milk
1 egg
1 egg yolk
a pinch of salt
110g (1/2 cup) of butter
For decoration:
Powdered sugar
Cocoa powder
METHOD
1. In a bowl add the flour, sugar, orange (zest), yeast, and powdered spices and whisk. Add the milk, egg, egg yolk, and salt and mix with a spatula. Gradually add the butter and work with the mixture to obtain the compact dough. Cover with cling film and let it rise for 2 hours, or until is double in volume.
2. After time has elapsed roll out the dough and transfer to the baking tray (23x30cm - tray size). Cover with cling film and let it rise for 2 hours.
3. After 20 minutes transfer to the oven and bake bake at 180°C/360°F for 20 minutes.
4. Sprinkle the schiacciata with plenty of powdered sugar. Use a stencil place it in the center of the cake and sprinkle it with cocoa powder.
5. Remove the stencil, cut a slice and serve.
