Carnival cake: the soft and delicious dessert, very simple to prepare!

INGREDIENTS
40g of raisins
60ml (4 tbsp) of rum
2 eggs
130g (1/2 cup) of sugar
1 orange (zest)
60g (1/4 cup) of butter (melted)
180g (1 1/2 cups) of all-purpose flour
8g (1/2 tbsp) of baking powder
50g of candided fruit
Sugar granules
Candied cherries for decoration
METHOD
1. Add the raisins into the small bowl and pour the rum. Mix and set aside for 10 minutes.
2. In a mixing bowl add the eggs and sugar and mix with the electric mixer until fluffy. Add the orange (zest), and butter (melted), sift the flour and baking powder, and continue mixing until all is well combined.
3. Add the candied fruit, and prepared raisins and mix with a spatula well.
4. Pour the mixture into the cake mold (22cm - mold size) and level it with a spatula. Add the sugar granules on top, transfer to the oven and bake at 180°C/360°F for 40 minutes.
5. Decorate with candied cherries, cut on slices, and serve.
