Carnival roll fritters: they are irresistible!

INGREDIENTS

2 eggs;
60g (½ cup) butter, melted;
250ml (1 cup) milk, warm;
20g (2 tbsp) fresh yeast;
10ml (1 tsp) rum;
580g (4 3/4 cups) all-purpose flour;
50g (¼ cup) sugar;

Fill with:
200g (1 ⅓ cups) sugar;
Zest of 3-4 oranges.

METHOD

Whisk warm milk with sugar and yeast.
Add eggs, butter, and rum into the yeast mixture and whisk to combine.
Mix liquids with flour and knead until the smooth dough forms.
Set the dough aside for 1 hour.
Combine orange zest with 260 g of sugar.
Roll out the dough into a square and spread orange filling on top.
Roll the dough and cut it into pieces.
Fry dough rolls in preheated oil for 3–4 minutes or until golden on both sides.
