Puff pastry Christmas tree with ricotta and spinach: a simple idea for a tasty appetizer

INGREDIENTS
2 sheets puff pastry
80g (⅓ cup) ricotta
400g (8 cups) fresh spinach
Salt and pepper
Olive oil
Cherry tomatoes
Egg wash
METHOD
1. Preheat the oven to 190°C/375°F.
2. Roll out 1 sheet of puff pastry and spread some cream cheese on top of it forming the shape of the tree.
3. In a large pan placed over medium-low heat up olive oil and saute spinach in batches until fully wilted. Season with salt and pepper. Squeeze any excess moisture out of the spinach.
4. Spread spinach evenly on top of the cheese. Brush egg washes around the filling and places another sheet of puff pastry on top.
5. Cut out any excess forming the shape of the tree you made earlier. Make slits all over the sides of the tree and twist them as shown on the video.
6. Brush the Christmas tree with egg wash and bake for 30 minutes. decorate with cherry tomatoes.
