PROTEIN CRÊPES: very light without sugar, butter or oil!

INGREDIENTS
150g (2/3 cup) egg whites
50g (1/2 cup) oat flour
1 tsp vanilla extract
50ml (3 tbsp + 1 tsp) water
A pinch of salt
Mixed berries, as needed
Maple syrup, as needed
METHOD
1. In a large bowl, add the egg whites, oat flour, salt, and vanilla extract.
2. Whisk with a hand whisk until the ingredients are combined.
3. Gradually add the water while whisking, until you obtain a smooth, homogeneous batter.
4. Heat a non-stick pan and lightly grease it with a small amount of vegetable oil.
5. Pour a ladle of batter into the pan and swirl it to evenly coat the base.
6. Cook for a few minutes until set, then flip the crêpe using a spatula.
7. Cook for another minute on the other side.
8. Serve with fresh mixed berries and maple syrup.
