MIMOSA EGGS: the quick and tasty appetizer to celebrate Women's Day!

INGREDIENTS
6 eggs
120 g canned tuna in oil
6 anchovies in oil
1 tbsp capers
2 tbsp mayonnaise
Parsley
METHOD
1. Place the eggs in cold water and bring to a boil. Boil for 8 minutes.
2. Then, place the eggs under cold water and peel them.
3. Cut the eggs in half and remove the yolks, leaving the egg whites intact. Set aside two yolks.
4. In a bowl, combine the yolks, tuna, anchovies, capers, and mayonnaise. Blend everything with an immersion blender until smooth. Transfer the mixture to a piping bag with a star tip.
5. Fill the egg whites generously with the mixture and crumble the remaining yolk on top for decoration.
6. Finish by garnishing with finely chopped parsley.
