COCONUT MUFFINS: SOFT and FRAGRANT! π

INGREDIENTS
2 eggs
130g (3/4 cup) of sugar
150g (1/2 cup) of yogurt
130g (1/2 cup) of butter (melted)
130g (1 cup) of coconut flour
170g (1 1/2 cups) of flour
8g (1/2 tbsp) of baking powder

Honey for brushing
Shredded coconut
METHOD
1. In a bowl add the eggs and sugar and whisk to dissolve the sugar. Add the yogurt, butter, coconut flour, flour, and baking powder and mix to combine.
2. Place the paper cups into the muffin tray and pour the batter into the cups. Bake at 180Β°C for 25 minutes.
3. After baking remove the cups from the muffins, brush them with the honey, and sprinkle with shredded coconut. Serve and enjoy.
