COCONUT CAKE: SOFT and FRAGRANT! 🥥

INGREDIENTS (for a 20cm cake mold)
120g (1 cup) of flour
80g (1 cup) of coconut flour
60ml (1/4 cup) of sunflower oil
150g (3/4 cup) of sugar
2 eggs
125g of plain yogurt
2 tsp of baking powder
1 tsp of vanilla extract
2 tbsp of honey
Grated coconut, as needed
METHOD
1. Mix the flour, baking powder, and coconut flour in a large spoonful bowl.
2. In a large bowl, beat the eggs and sugar with an electric mixer for a few minutes until the mixture is tall and whitish.
3. Add the sunflower oil and mix again for a moment.
4. Add the plain yogurt and vanilla extract, and combine the ingredients using the electric mixer.
5. Finally, add the dry ingredients, mixing at low speed and gradually increasing it.
6. Pour the mixture into the cake tin lined with baking paper.
7. Bake at 180°C for about 45 minutes. Let it cool.
8. Heat the honey on the stove or microwave until it becomes liquid.
9. Brush the honey on the surface of the cake and then decorate it with a few handfuls of coconut flour.
