LEMON MUFFINS: soft and super fragrant!

INGREDIENTS (makes about 12 muffins)
250g (2 cups) all-purpose flour
200g (1 cup) sugar
80ml (1/3 cup) milk
Zest of 1 lemon
100g (3/4 cup) cornstarch
3 eggs
50ml (1/4 cup) vegetable oil (sunflower oil recommended)
100ml (1/3 cup + 1 tbsp) lemon juice
2 tsp baking powder
For the glaze:
20ml (1 tbsp + 1 tsp) lemon juice
100g (3/4 cup) powdered sugar
For decoration:
12 lemon slices
12 mint leaves
METHOD
1. In a large bowl, add the eggs, sugar, milk, lemon juice, lemon zest, and vegetable oil.
2. Mix with a spoon until you obtain a smooth, homogeneous liquid mixture.
3. Add the all-purpose flour, cornstarch, and baking powder, then mix again until the batter is smooth and lump-free.
4. Line a muffin pan with paper liners.
5. Spoon about 2 tablespoons of batter into each liner.
6. Bake at 180°C/350°F for about 25 minutes. Let cool completely.
7. In a bowl, combine the lemon juice and powdered sugar and mix until smooth.
8. Spoon a little glaze over each muffin.
9. Decorate with lemon slices and mint leaves before serving.
