LEMON MELTAWAYS: the irresistible, fragrant and delicious English biscuits!

INGREDIENTS
160g butter (soft)
110g (1 cup) powdered sugar
Zest of 2 lemons
Juice of 1/2 lemon
A pinch of salt
210g (1 3/4 cups) all-purpose flour
60g (1/2 cup) corn starch
For coating:
Powdered sugar
METHOD
1. In a bowl, whisk together the butter and powdered sugar. Add the lemon zest, lemon juice, salt, flour, and corn starch, and mix until combined.
2. When the dough begins to come together, knead it by hand until smooth and compact. Divide the dough in half and shape each portion into a cylinder. Wrap each cylinder in cling film and refrigerate for 12 hours.
3. Once chilled, transfer the cylinders to a cutting board and slice them into 1-centimeter thick disks.
4. Place the cookies on a baking tray lined with parchment paper. Bake at 180°C/360°F for 10 minutes.
5. Remove from the oven, let cool completely, then coat in powdered sugar. Serve and enjoy.
