HEART-SHAPED RAVIOLI: A romantic and delicate first course! β€οΈπ€

INGREDIENTS
For the pasta:
3 eggs
100g semolina
300g all-purpose flour
Salt to taste

For the filling:
200g potatoes
200g shrimps
30g grated cheese
Salt to taste

For the sauce:
200g bΓ©chamel sauce
2 tbsp tomato purΓ©e
Olive oil and salt to taste

METHOD
1. Boil the potatoes for about 20 minutes (depending on their size). Once warm, peel them, mash them, and set them aside.
2. Meanwhile, prepare the pasta dough by combining all the ingredients in a bowl. First, mix with a fork, then knead by hand. Transfer the dough onto a wooden surface to form a dough ball. Wrap it in plastic wrap and let it rest in the fridge for 30 minutes.
3. Add the previously cooked and chopped shrimp to the mashed potatoes, along with the grated cheese. Adjust the salt and mix well.
4. After the resting time, roll out the dough very thin (about 2-3mm if possible). Place a spoonful of filling on the dough and fold it over. Use a heart-shaped cookie cutter to shape the ravioli. Seal the edges well.
5. Bring a pot of water to a boil. While waiting, pour all the sauce ingredients into a pan and cook for 5 minutes.
6. Drop the ravioli into the boiling water and cook for about 5 minutes (they will float and puff up).
7. Drain the ravioli and toss them with the prepared sauce. If desired, garnish with a few sage leaves and some extra shrimp before serving. πβ€οΈπ€
