published on 12 February, 2023 at 13:20
INGREDIENTS
500g (4 cups) of all-purpose flour
50g (1/4 cup) of sugar
10g of fresh yeast
1 lemon (zest)
1 orange (zest)
1 egg
210ml (3/4 cup) of water
4g of salt
40g of butter (soft)
Hazelnut cream
Oil for frying
Sugar
METHOD
1. In a bowl add the flour, sugar, yeast, lemon (zest), orange (zest), egg, water, salt, and butter and mix. When the dough starts to form knead with your hands to obtain a smooth dough. Cover with cling film and let it rise for 2 hours, or until doubles in volume.
2. After time has elapsed split the dough into two halves. Roll out the first half and with the heart mold (10cm mold size) make the shapes.
3. Transfer them to the baking tray covered with parchment paper and with the smaller heart-shaped mold prick the central part. Cover with a cloth and let them rise for 1 hour.
4. Roll out the other half of the dough and divide it into several parts. Spread hazelnut cream on one piece of the dough and cover with another one sealing the edges well.
5. Cut the dough with the heart mold and transfer them to the baking tray covered with parchment paper. Cover with a cloth and let them rise for 1 hour.
6. After time has elapsed transfer them to the pan with hot oil and fry until they are golden brown.
7. Cover heart-shaped fritters with sugar and serve.
