RICE CAKE: simple and tasty!

INGREDIENTS
800ml (3 1/4 cups) of milk
110g (1/2 cup) + 100g (1/2 cup) of sugar
13g (1 tbsp) of vanilla sugar
210g (1 cup) of rice
3 eggs
Lemon (zest)
60g (1/4 cup) of almond flour
60ml (1/4 cup) of amaretto
Powdered sugar
METHOD
1. In a saucepan add the milk, sugar, and vanilla sugar and bring to a boil. Add the rice and cook on low heat stirring occasionally (about 1 hour). Cook until the rice absorbs all the milk. Remove from the heat and let it cool.
2. In a mixing bowl add the eggs and sugar and mix with the electric mixer until fluffy. Add the lemon (zest), prepared rice with milk, almond flour, and amaretto, and incorporate with a spatula.
3. Pour the mixture into the cake mold (24cm - mold size) covered with parchment paper. Bake at 180°C/360°F for 50 minutes.
4. Transfer the cake to the serving dish after baking and decorate with powdered sugar. Cut a slice and serve.
