Tomato rice cake in a pan: super delicious and easy to make!

NGREDIENTS

250g (1 cup) arborio rice;
Salt & pepper
300ml (1 ¼ cup) tomato sauce;
15g (1 tbsp) tomato paste;
½ onion, minced;
500ml (2 cups) vegetable broth;
100 g (½ cup) shredded sharp cheese;
200 g (1 cup) shredded cheese;
1 tsp mixed italian herbs;
Breadcrumbs;
Olive oil.
METHOD
- Heat some olive oil in a pan and saute minced onion until translucent (around 1 minute).
- Add arborio rice and stir for 1 minute more.
- Combine rice and onion with salt, pepper, dried herbs and tomato paste. After around one more minute pour tomato sauce and a couple of ladles of broth into the pan.
- Cook, stirring and adding broth gradually, for around 10 minutes, or until rice is al dente. Add ½ cup of cheese and stir.
- Set the rice aside to cool down slightly (for around 10 minutes).
- Brush the pan with olive oil and cover with breadcrumbs. Spread half of the rice in the pan. add 1 cup of cheese and cover it with leftover rice.
- Cook rice cake over medium-low heat for 10 minutes, then flip carefully onto a plate and return back into the pan to crisp up on the other side.
- After around 7 more minutes, flip onto a serving plate and serve right away.
