Sweet rice fritters: they are addictive!

Crispy and so delicious, here's the perfect idea to reuse leftover rice!
INGREDIENTS
INGREDIENTS
400 g (14 oz) rice;
4 cups milk;
1 orange (zest);
¼ tsp vanilla powder;
½ tsp salt;
¼ tsp cinnamon;
200 g (7 oz) flour;
5 tbsp powdered sugar;
2 tsp baking powder.
METHOD
- Pour milk into a pot of rice. Add cinnamon, salt, vanilla and orange zest into it.
- Cook rice over medium-low heat for around 10 minutes or until fully cooked.
- Add flour, powdered sugar and baking powder into hot rice. Stir everything well and transfer on a large dish, spreading it into an even layer to make sure it cools down as quickly as possible.
- When the rice has cooled down, take a small portion and form it into a sausage with your wet hands. Dredge in ‘00’ flour.
- Heat vegetable oil over medium heat and cook rice donuts until golden. Serve coated with sugar.
