Rice fritters and zucchini: quick and easy to prepare!

This is a perfect way to use up stale rice!

INGREDIENTS
350g (2 cups) rice
600ml (3 cups) hot water
1 zucchini
green onion
2 eggs
1/2 tsp black pepper
1 tsp salt
150g (1 cup) cheddar cheese
Oil

METHOD
  1. Cook rice, finely chopped zucchini, and green onion.
  2. In a bowl mix together rice, eggs, zucchini, chopped cheese, green onion, salt, and pepper.
  3. Make a ball and fry them from both sides until golden brown.
