RICE CHIPS: perfect for a tasty snack!

INGREDIENTS
350ml (1 1/2 cups) of water
300g of rice
20ml of extra virgin olive oil
a pinch of salt
Parmesan
Paprika
 
For the fried version:
Oil for frying
 
METHOD
1. In a pot, add the water and rice and bring to a boil. Cover with a lid and cook for 20 minutes, or until the rice has absorbed all the water.
2. Transfer the cooked rice to a food processor, add the olive oil and salt, and blend for a few seconds.
3. Take teaspoonfuls of the rice dough, roll them into balls, and place them on a baking tray lined with parchment paper.
4. Place a second sheet of parchment paper on top of the balls and press down with a flat object to flatten them into disks.
5. Remove the top sheet of parchment and sprinkle the chips with Parmesan and paprika. Bake at 180°C/360°F for 15 minutes.
6. Serve the baked rice chips and enjoy.
7. For the fried version, add the disks to a pan with hot oil and fry for a few minutes, or until they become nice and crunchy.
8. Serve the fried rice chips and enjoy.
