CHILI CHOCOLATES: these will win your partner's heart this Valentine's Day!

INGREDIENTS
300g (1 ¾ cups) dark chocolate
100ml (½ cup) sweetened whipping cream
2 dried chili peppers
METHOD
1. Chop the dark chocolate into roughly sized pieces using a cutting board and a knife.
2. Pour the cream into a small saucepan and add the dried chili peppers.
3. Place over the heat and let it simmer for a few minutes, stirring continuously.
4. Strain the cream into another saucepan using a fine sieve to remove the chili peppers.
5. Place the saucepan over low heat and warm the cream, stirring continuously.
6. When the cream starts to boil, add the dark chocolate.
7. Stir until you get a smooth, lump-free cream.
8. Pour the chocolate mixture into a piping bag. Cut the tip with scissors, keeping the opening small.
9. Fill the molds with the chocolate mixture.
10. Level the surface with a flat spatula, removing any excess chocolate.
11. Refrigerate for at least 4 hours.
