Chocolate tacos: the best way for start your day!

INGREDIENTS

300g (2 cups) all-purpose flour;

2 eggs;

150g (2/3 cup) sugar;

3 tbsp (25 g) cocoa powder;

¼ tsp vanilla powder;

360m (1 ½ cup) milk;

4g (1 tsp) baking powder;

500ml (2 cups) whipped cream;

Chopped pistachios.

METHOD

Whisk eggs with sugar and vanilla until pale. Pour in half of the milk and whisk.
Add cocoa powder, flour and baking powder. Whisk until the batter comes together, then pour in leftover milk and whisk until smooth.
Pour a ladle spoon of batter on a preheated non-stick pan and cook until bubbly, around 2 minutes. Flip and cook for 2 more minutes.
Add a thick layer of cream on one half of the pancake. Fold in half and add chopped pistachios on top.
