Crispy outside and tender inside, this is the best way to cook eggplants!

INGREDIENTS
3 eggplants
2 eggs
Salt
Pepper
Breadcrumbs
Oil
 
METHOD
  1. Boil the eggplants for 10 minutes, then remove the peel. Season with salt, pepper, dip in an egg, roll in breadcrumbs. Dip in egg and breadcrumbs again.
  2. Fry in a lot of oil.
