3 ways to cook eggplant: they are just amazing!

How to make a delicious stuffed eggplant in no-time!
INGREDIENTS
500 g (2 ¼ cup) minced beef;
1 onion, minced;
2 egg yolks;
1 tsp each salt and pepper;
1 tsp curry powder;
1 tsp paprika;
4-5 eggplants;
Potato wedges;
Olive oil.
METHOD
- Heat the oven to 190C/375F.
- Combine minced meat with onion, yolks and spices.
- For the first way cut 2 eggplants in half, place chopsticks on each side and slice leaving 3 cm space in-between each cut. Roll on the other side and repeat the same process, placing each cut into 3 cm gap. Unfold eggplant on a skewer and fill each cut with a meat mixture.
- For the second way cut eggplant lengthwise, leaving the stem part intact. Microwave eggplants for around 1 minute, to soften each ‘petal’. Wrap portions of meat into each ‘petal’, secure with a toothpick if needed.
- For the third way make crosswise slits along with the whole eggplant (use chopsticks to prevent cutting through). Fill each slit with meat.
- Season potato with olive oil and salt. Place it on a large parchment-covered baking sheet along with eggplants and bake for 40 minutes.
