Fried eggplants on a bed of cherry tomatoes: perfect for a mouth-watering lunch!

The most amazing way to cook eggplant! 

INGREDIENTS:
• 2 eggplants
 • 1kg cherry tomatoes
 • salt
 • 1 clove of garlic
 • olive oil
 • oil
 
METHOD:
  1.  Cut the eggplants and deep-fry.
  2. Pour olive oil into a pan and fry the garlic clove. Then add the chopped cherry tomatoes, salt and prepare the sauce. 
  3. Put eggplants in the prepared sauce.
