Baked Eggplant and Potatoes with Tomato Sauce is a simple, peasant food dish made with few, fresh ingredients and is incredibly flavorful.
INGREDIENTS

3 eggplants
250g ground beef
1 onion
½ tsp salt
½ tsp black pepper
1 tsp paprika
2 tbsp breadcrumbs
2 potatoes
6 cherry tomatoes
4 green peppers
2 cups water
1 tbsp tomato paste
METHOD
- Stuffing mix with all the ingredients. Shape the meatballs. Cut the eggplant, salt, and put the meatballs inside the eggplant.
- Put stuffed eggplant, chopped potatoes, cherry tomatoes and green peppers in the form. Pour in tomato sauce (1 tablespoon tomato paste, 2 cups of water). Bake 40 minutes at 180 ° C / 350F.
