A tasty way to cook eggplants!

INGREDIENTS

2 eggplants

Olive oil

Bread (soak in the milk)
50 (1/2 cup) parmesan cheese + for sprinkling

2 eggs

METHOD

Brush the eggplant with olive oil and bake in the oven at 200 ° C for 20 minutes.
Remove the inside of the eggplant and mix it with the milk and bread and parmesan cheese to prepare the filling.
Put the filling in the eggplant, sprinkle with parmesan cheese and add the egg whites on top, and bake in the oven at 200 ° C for 10 minutes.
Add egg yolks and bake for another 3-5 minutes.
