Baked eggplant fans: quick, easy and creative!

If you love eggplant, you should try this amazing dish!
INGREDIENTS
2 tomatoes
2 eggplants
Salt to taste
Pepper to taste
120g Mozzarella
Extra virgin olive oil to taste
Fresh basil leaves
METHOD
- Cut eggplants into slices but not fully and sprinkle with salt.
- Cut tomatoes into slices and shred mozzarella. Fill eggplants with mozzarella and tomatoes. Put basil leaves onto each slice.
- Pour with olive oil and bake at 180’ C (356’F) for 40 minutes.
