Baked eggplant fans: quick, easy and creative!

If you love eggplant, you should try this amazing dish! 
 
INGREDIENTS
2 tomatoes
2 eggplants
Salt to taste
Pepper to taste
120g Mozzarella
Extra virgin olive oil to taste
Fresh basil leaves
 
METHOD
  1. Cut eggplants into slices but not fully and sprinkle with salt.
  2. Cut tomatoes into slices and shred mozzarella. Fill eggplants with mozzarella and tomatoes. Put basil leaves onto each slice.
  3. Pour with olive oil and bake at 180’ C (356’F) for 40 minutes.
