Baked eggplant: the recipe for a quick dinner!

INGREDIENTS
2 medium eggplants;
100 g (2/3 cup) ham, sliced;
50 g (1/2 cup) sliced cheese;
50 g (1/2 cup) shredded sharp cheese;
Shredded cheese for topping;
¼ cup olive oil;
3 garlic cloves, minced;
Salt and pepper to taste.
METHOD
- Preheat the oven to 180C/350F.
- Cut each eggplant in half lengthwise. Make slits cutting 2/3 way through.
- Mix olive oil with salt, pepper and minced garlic. Brush on top of each eggplant.
- Fill the slits with ham and sliced cheese. Add some shredded sharp cheese on top to add more flavor.
- Bake for 30 minutes, take out, add more cheese of your choice on top and bake for 10 minutes more. Serve right away.
