Baked eggplant: the recipe for a quick dinner!

INGREDIENTS
 2 medium eggplants;
 100 g (2/3 cup) ham, sliced;
 50 g (1/2 cup) sliced cheese;
 50 g (1/2 cup) shredded sharp cheese;
 Shredded cheese for topping;
 ¼ cup olive oil;
 3 garlic cloves, minced;
 Salt and pepper to taste.
 
METHOD
  1.  Preheat the oven to 180C/350F.
  2.  Cut each eggplant in half lengthwise. Make slits cutting 2/3 way through.
  3.  Mix olive oil with salt, pepper and minced garlic. Brush on top of each eggplant.
  4.  Fill the slits with ham and sliced cheese. Add some shredded sharp cheese on top to add more flavor.
  5.  Bake for 30 minutes, take out, add more cheese of your choice on top and bake for 10 minutes more. Serve right away.
