Eggplant with quail eggs: perfect for a quick and delicious dinner!

INGREDIENTS
2 large eggplants
Olive oil
1/2 tsp salt
1/3 tsp pepper
90g mozzarella, shredded.
8 quail eggs
Parmesan
METHOD
1. Cut the eggplants into two pieces, make cuts, and add olive oil, salt, and pepper.
2. Bake at 190’C (380’F) for 20 minutes.
3. Mash eggplant filling with a fork and adds shredded mozzarella, quail eggs, and Parmesan cheese.
4. Bake for 15 minutes more.
