Eggplants skewers: perfect for a family dinner!

These are perfect for a tasty dinner ready in a few steps!
INGREDIENTS
2 Eggplants
40g (1/3 cup) of Breadcrumbs
30g (1/4 cup) of Parmesan cheese
Dry oregano
Salt
Extra virgin olive oil
Cooked ham
180g of Smoked cheese
METHOD
- Cut the eggplants lengthwise, then brush them with a drizzle of olive oil.
- Pour the grated Parmesan cheese and breadcrumbs into a plate and season with salt, dry oregano, and mix.
- Season with a drizzle of extra virgin olive oil and then dip them into the previously prepared breadcrumbs mixture. Bake in the oven at 180°C/356°F for 15 minutes.
- Stuf them with a slice of cooked ham and a piece of smoked cheese, roll them out and stick them in the skewer sticks.
- Bake in the oven at 180°C/356°F for 15 minutes.
