Eggplant medallions: the quick recipe for a delicious dinner!

INGREDIENTS
1 eggplant
150g cheese
100g (1 cup) breadcrumbs
40g (4 tbsp) parmesan
Parsley
2 eggs
150g ham
Salt
METHOD
1 eggplant
150g cheese
100g (1 cup) breadcrumbs
40g (4 tbsp) parmesan
Parsley
2 eggs
150g ham
Salt
METHOD
- Cut the eggplant.
- Make a mixture of breadcrumbs, parsley, Parmesan, and salt.
- Beat the eggs with a pinch of salt.
- Stuff the eggplant slices with ham and cheese. Dip in egg mixture and breadcrumb mixture twice.
- Fry in a little oil. Serve.
