Eggplant medallion: ready in the pan in few minutes!

A tasty and creative idea to cook eggplant!
INGREDIENTS
INGREDIENTS
2 eggplants
1 red bell pepper
1 green pepper
1 carrot
1/2 cup chopped olives
1/2 tsp salt
1/3 tsp black pepper
1 tbsp vegetable oil
4 eggs
METHOD
- Slice the eggplants, cut out the middle and finely chop it, transfer to the bowl and mix it with peppers, carrot, olives, salt, pepper, olive oil, and eggs.
- Add eggplant circles onto the pan and fill them with the prepared mixture.
- Fry from both sides.
