Eggplant medallion: ready in the pan in few minutes!

A tasty and creative idea to cook eggplant!

INGREDIENTS
2 eggplants
1 red bell pepper
1 green pepper
1 carrot
1/2 cup chopped olives
1/2 tsp salt
1/3 tsp black pepper
1 tbsp vegetable oil
4 eggs

METHOD
  1. Slice the eggplants, cut out the middle and finely chop it, transfer to the bowl and mix it with peppers, carrot, olives, salt, pepper, olive oil, and eggs.
  2. Add eggplant circles onto the pan and fill them with the prepared mixture.
  3. Fry from both sides.
