Eggplant medallions: the quick and delicious dish to make!

A delicious way to enjoy this fall vegetable!

INGREDIENTS
2 large eggplants
180g minced meat
100g stale bread
40g parmesan
1 egg
50g tomato sauce
100g mozzarella
1/2 tsp salt
Basil leaves
Olive oil
1 garlic clove
3 tbsp breadcrumbs
 
METHOD
  1. Slices eggplants, cut out the middle and cut it into small pieces, salt it.
  2. In a pan fry chopped eggplants with garlic and meat.
  3. When it’s cool enough add in egg and Parmesan.
  4. Fill eggplant rings with cooked eggplant mixture, sprinkle with breadcrumbs.
  5. Bake at 200°C (390°F) for 15 minutes.
  6. Turn over the medallions and spread with tomato sauce and sprinkle with mozzarella.
  7. Bake for another 15 minutes. Top with basil leaves.
