Eggplant medallions: the quick and delicious dish to make!

A delicious way to enjoy this fall vegetable!
INGREDIENTS

2 large eggplants
180g minced meat
100g stale bread
40g parmesan
1 egg
50g tomato sauce
100g mozzarella
1/2 tsp salt
Basil leaves
Olive oil
1 garlic clove
3 tbsp breadcrumbs

METHOD
- Slices eggplants, cut out the middle and cut it into small pieces, salt it.
- In a pan fry chopped eggplants with garlic and meat.
- When it’s cool enough add in egg and Parmesan.
- Fill eggplant rings with cooked eggplant mixture, sprinkle with breadcrumbs.
- Bake at 200°C (390°F) for 15 minutes.
- Turn over the medallions and spread with tomato sauce and sprinkle with mozzarella.
- Bake for another 15 minutes. Top with basil leaves.
