Eggplant medallions: a tasty side dish to try!

You've never tried eggplant in this way!
Ingredients:
Ingredients:
⦁ 3 medium eggplants;
⦁ 3 eggs;
⦁ 1/4 cup scallions;
⦁ 200 g (1 cup) ham, cubed;
⦁ 45 g (3 tbsp) flour;
⦁ salt and pepper.
Instructions
1. Slice eggplants into large circles (around 2.5 cm/1 inch) thick.
2. Use glass to poke out hole in the middle of each slice.
3. Chop eggplant pulp and mix with ham, eggs, salt, pepper, scallions and flour.
4. Heat vegetable oil over medium heat. Fry eggplant circles until golden on both sides, then pour egg mixture in the middle, cover with a lid, lower the heat and cook for 3-4 minutes, flip, cover and continue cooking for the same amount of time.
5. Serve right away, topped with some chopped parsley.
